Holiday Potlucks: Black Bean and Feta Salsa

Yesterday, my coworkers and I had a holiday potluck complete with a gift exchange and a Christmas carol or two. I was worried that lunch would end up being so many cookies and candies, so I made an effort to make something that would stand out from the rest of the heavy holiday fare. The following recipe is one that my mom started making several years ago. Every time she brought some to another party or get-together, at least one or two people asked her for the recipe. Those same parties usually saw me standing by the salsa bowl saying “just one more bite… just one more bite…” I was happy to make this again the other night, and happier still to find both myself and my husband with the leftovers, telling ourselves we’d have just one more bite…


Black Bean and Feta Salsa

In a large mixing bowl add:

1 can black beans, drained
1 can shoepeg corn
1 bunch green onions, sliced thin
8 oz. feta cheese, crumbled

In another bowl, whisk together:

1/4 tsp. garlic powder
1/4 C. vinegar
14 C. oil
1/4 C sugar

Mix everything together and chill.
Enjoy with tortilla chips!
